Chicken Tortilla Soup

Ingredients 4 boneless, skinless chicken breasts 1 box chicken broth 2 cans Rotel (original) more or less depending on your taste 1 block Cream Cheese 1 can Cream of Chicken Soup Garnishes 1 bag Tortilla Chips 1 lb Cheddar Cheese, grated 2 cans corn Sour Cream can be used (usually 1-2 tbsp) to tone this down Avocado's are great, too (I didn't use corn or avocado's, but they are great!!!!) Boil chicken Drain (I usually keep about 1/4 of the broth) and shred Add additional broth, Rotel, Cream Cheese, Cream of Chicken Soup and corn. Boil until hot and the Cream Cheese has dissolved. Serve in bowls over Tortilla Chips, cheese, sour cream and avocados. This does make a lot and freezes great in Zip-locks!!!!
